Sambal Grilled Fish in Banana Leaf (Ikan Bakar)

Do you like grilled fish? Look no further, we have a fun and delicious recipe for you. This is a Malaysian Style Grilled fish also know as Ikan Bakar. Add some vegetables to it and wrap it in banana leaves. Finish it on the grill or oven. Viola!

  1. In a bowl, mix equal parts of Bun Bo Hue and Sayur Lodeh in a bowl or adjust Bun Bo Hue paste to a spicy level to make sambal.
  2. Lay a few sheets of banana leaves and grease the surface of the banana leaves with some oil. Lay fish on top of the banana leaves. Add about 2 - 3 tablespoons of sambal to cover the surface of the fish evenly. Wrap the top and secure ends of the banana leaf with toothpicks.
  3. Place the fish on top of the BBQ grill (upper rack with indirect heat) or on a griddle/pan and cover the BBQ. Option to cook it in the oven as well. Wait for 8 minutes or so (depending on the heat) and flip the fish over to the other side.
  4. Cook for another 8 minutes or until the fish is cooked.Transfer the fish and the banana leaves to the lower rack and grill for a couple of minutes with direct heat, or when you smell the sweet aroma of burnt banana leaves.
  5. Transfer out and serve immediately with more of the sambal mix and some lime.
