INGREDIENTS

3-4 tbsp Kopi Thyme sauce of your choice (Ipoh Laksa, Kam Heong, or Kari Ayam work great!)
4-5 sheets Rice Paper (round, typically used for spring rolls)
½ cup Oil (for frying)
7 oz Tofu (pat dry, diced; substitute with ground meat if non-vegan)
1 small Carrot (diced)
1 small Green Pepper (diced)
2 stalks Green Onion (chopped)

INSTRUCTIONS

1️⃣ Prepare the Rice Paper Nachos:
✔ Heat oil in a shallow pan over medium heat.
✔ Using scissors, cut rice paper into triangles. (They will puff up when fried!)

Cut rice paper rolls to make triangles for nachos with kopi thyme's recipe ideas.
✔ To test the oil temperature, drop in a small piece—if it immediately puffs up, the oil is ready.
✔ Fry each piece for just a few seconds until crispy, then remove and drain on a paper towel.

2️⃣ Cook the Topping:
✔ Heat 1 tbsp oil in a separate skillet over medium heat.
✔ Add Kopi Thyme sauce and tofu (or ground meat), stirring occasionally.
✔ Cook until tofu softens or the meat reaches an internal temperature of 160°F.
✔ Once the sauce thickens, remove from heat and set aside.

3️⃣ Assemble the Nachos:
✔ Arrange the crispy rice paper nachos on a plate.
✔ Sprinkle with diced carrot, green pepper, and green onions.
✔ Drizzle extra Kopi Thyme sauce over the top for even more flavour!

🛑 Serve immediately! The crispiness fades if left too long.
