Cucumber Lemongrass Lemonade

When life gives you lemons, make yourself a cucumber lemongrass lemonade! Made with Kopi Thyme’s Uop Sa Noung marinade, fresh ginger, honey, lemon and cucumbers, this drink is light, refreshing and well-balanced. 

It’s kid-friendly and perfect for St. Patty’s Day! Spike it with your favourite alcohol if you like, we won’t tell anyone. 



  • Ice
  • 2-3 tbsp Kopi Thyme’s Uop Sa Noung
  • ½ inch Ginger
  • 2 cups cut Cucumber with skin on
  • ½ cup Lime and Lemon juice
  • 5 tbsp Honey
  • 850mL Carbonated water
  • Cucumber ribbons
  • Limes and Lemon slices
*Option to add alcohol to make it a cocktail
  1. In a blender or food processor add in cucumber, ginger and Uop Sa Noung. Blend until cucumber pieces are broken down into a thick puree.
  2. Place a fine-mesh strainer over a measuring cup and strain puree out. Gently press down with a spoon on puree to squeeze out as much liquid as possible.
  3. Add lime and lemon juice to the cucumber mixture. Stir in honey and mix well.
  4. In a jug, add ice, cucumber ribbons and lime and lemon slices. Pour in cucumber lemonade mixture and top it off with carbonated water. Mix well and enjoy.
