Laksa Mac & Cheese

Everyone loves mac & cheese. Have you tried making it with a twist? Add laksa to a classic to flavour it up. You can thank us later. Try out this recipe with 3 takes on mac & cheese.

 

SERVINGS 2 | PREP TIME 5 min | TOTAL TIME 20 min

  
INGREDIENTS
  • ½ cup Kopi Thyme’s Ipoh Laksa
  • ½ cup Coconut Milk
  • 1 cup Cheddar or Mozza, shredded (option of using Velveeta) 
  • 1 cup elbow macaroni, uncooked
  • Grated Cheese, to bake into bites 

*Option to add any protein or vegetables to liking

Optional to make into fried bites:
  • ¼ cup All-purpose flour
  • 2 large Eggs, whisked
  • ¾ cup Breadcrumbs
INSTRUCTIONS
  1. Cook pasta to almost al dente; drain. 
  2. In a saucepan over medium low heat, add Laska paste, coconut milk and Velveeta or cheese, whisking constantly until sauce comes to boil and simmer at low heat for 1 minute. ingredients to make laksa mac and cheese
  3. Remove from heat and combine the paste into cheese sauce gently. 
  4. Plate to serve. Option to bake with a cheese crumble into bites or a whole casserole for 10 minutes at 375 F or until cheese is melted.

Fried Mac & Cheese Bites:

  1. Scoop room temperature curry mac and cheese and roll into 1.5-inch balls and refrigerate for at least 1 hour. 
  2. Place flour, eggs and breadcrumbs in 3 separate shallow bowls. 
  3. Heat oil in skillet to 375 F or turn on your air fryer to 375 F.
  4. Coat each bites with flour then dip in whisked eggs and then the breadcrumbs. Press slightly to make sure the crumbs stick well. ingredients to make laska mac and cheese bites
  5. Cook:
  • Deep fry: Fry 4-7 bites for about 3 minutes or golden brown.
  • Air Fry : Fry 3-6 bites for 7-8 minutes or golden brown.
  • Drain excess oil from bites and serve immediately.

Hi Sara,
Just made a big batch of your Mac & Cheese (casserole style) recipe, using Ipohthe Kopi Thyme Laksa sauce! Absolutely, gorgeous, delicious, authentic, and rich! So easy to use…a little from the jar goes a long ways as it is packed full of quality ingredients, full of complex flavors and punch! It was a hit with my foodie cousins! Thank you!
