Prosperity Toss Salad (Yee Sang)

Yee Sang is served on the eve of the Chinese New Year  right through Chap Goh Mei (the fifteenth day of the Chinese New Year).
Yee Sang,(鱼生), a homophone for Yúshēng (余升), means “increase in abundance and vigour.” 

Eating this salad is a communal experience and is a lot of fun. Right before we eat it, everyone tosses it in the air with their chopsticks. It is believed that the higher and more vigorous the toss, the better the new year! But don’t forget those auspicious wishes! Throw in as many as you can remember, such as “good health,” and “good prosperity!” 

The salad itself is delicious. It is what a salad should be, with all the right notes – sweet, tangy, savoury, and crunchy! The sauce that goes along with it can be easily made with Kopi Thyme’s Uop Sa Noung (Lemongrass) marinade and will have you returning for seconds!
