No Diwali feast is complete with hot and crispy samosas! 

Made with our savoury, aromatic, vegan Kari Ayam paste, this recipe is quick, easy and a great way to elevate your Diwali dinner!

Trust us, your guests will keep going for seconds and even thirds! 

MAKES 10 MEDIUM SAMOSAS | PREP TIME 15 min | TOTAL TIME 35 min 

SERVINGS 2-4 | PREP TIME 5 min | TOTAL TIME 10 min 

INGREDIENTS

  • 2 ½ tbsp Kopi Thyme's Kari Ayam 
  • 2 cups potatoes, peeled and cubed 
  • 1/3 cup peas, carrot, corn, frozen 
  • 1 tsp Salt 
  • ½ tsp Cumin seed, toasted
  • ½ tsp Mustard seeds, toasted
  • 10 Spring roll sheets
Ingredients to make samosas: frozen spring roll sheets, spices, boiled potatoes, frozen vegetables, Kopi Thyme's Kari Ayam Paste  

    INSTRUCTIONS

    • Boil potatoes until potatoes are easily pierced with a fork. 
    • Drain water from the pot, and mash potatoes. 
    • Add in Kari Ayam paste, salt, peas, carrot, and corn. Mix to combine.

    • Preheat the air fryer to 385°F
    • Fold the spring roll sheets into a cone shape.

    • Fill the samosa with the potato filling, around 1 to 2 tablespoons. Don’t overfill the samosa.
    • Now again, apply water all around the circumference of the cone as you have to seal it. Pinch the edges and seal the samosa.
    • Repeat with remaining fillings. 
    • Coat the samosas with a thin layer of oil. 

    • Place the samosas in the air fryer and fry for 20 minutes or until they turn pale brown. 
    • Enjoy the samosas with mint chutney or sweet tamarind chutney.
