Sayur Lodeh Seri Muka

INGREDIENTS

Glutinous Rice Layer (bottom)

  • 300g Glutinous rice, soaked for 4hours-overnight
  • 180 ml Coconut Milk
  • 50 ml Water
  • 2tsp Salt
  • 2 leaves, Pandan tied in a knot

Custard Layer (top)

  • 2 eggs
  • 200ml Kopi Thyme Sayur Lodeh
  • 100ml Coconut Milk
  • 1 tsp Salt
  • ¼ cup Fish, cut into small pieces *optional to use shrimp or protein of choice
  • ¼ cup Vegetable of choice, chopped (recommended vegetables to use long beans, carrot, corn) 

INSTRUCTIONS

  1. In a 7in pan, round or square (baking or glass pan) and brush with some oil.
  2. Drain the soaked glutinous rice. Add glutinous rice, coconut milk, water, salt and pandan leaf. Mix ingredients well.
  3. Steam for 30 minutes.
  4. After 30 minutes, fluff the rice and remove pandan knots. Using a spatula or spoon, flatten the steamed rice. Make sure there are no holes/air bubbles and gaps in the rice, especially the sides.
  5. Steam for another 10 minutes.
  6. In a bowl, add Sayur Lodeh paste, egg, coconut milk, vegetables, fish and salt. Mix well. Pour over the steamed glutinous rice. 
  7. Steam for 1 hour.
  8. Let it cool down completely before cutting it to serve.
